Indulge in Balocco Savoiardi, the quintessential Italian ladyfingers, known for their light texture and delicate sweetness. Perfect for tiramisu and other desserts, they are expertly crafted to absorb flavors while maintaining their shape.

For a classic tiramisu, you'll need:

- 4 large eggs
- 100 g granulated sugar
- 500 g mascarpone cheese
- 300 ml espresso, cooled
- 2 tablespoons Marsala wine (optional)
- 24 Balocco Savoiardi ladyfingers
- Unsweetened cocoa powder, for dusting

1. Separate the egg whites from the yolks. Set aside the yolks and whip the egg whites until stiff.
2. Beat the egg yolks with sugar until light and smooth.
3. When the yolks are ready add the mascarpone cheese.
4. Add the stiffly beaten egg whites. Mix with a wooden spoon, from bottom up. Fold in slowly until smooth.
5. Combine espresso and Marsala wine in a shallow dish. Briefly dip each ladyfinger into the mixture, and layer them in a dish.
6. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and mascarpone cream.
7. Chill for at least 4 hours. Dust with cocoa powder before serving.
